Kanei Kobe Bonito Flakes or Katsuobushi is dried, fermented and smoked skipjack tuna – often referred to as Bonito or bonito flakes.

Shaved Bonito is the main ingredient of dashi, a broth that forms the basis of many soups (such as miso) and sauces in many Japanese dishes. Bonito has a very distinct umami taste with a smokey savoury taste that is a great accent for many Japanese dishes.

Bonito flakes shaved from top quality selected dried bonito. As these bonito flakes are shaved thinly, they can be used for toppings for salad, okonomiyaki and tofu.
